Sicilian Agriculture

Ingredients:
- 4 large Sicilian onions, thinly sliced
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 cup white wine
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions:
1. Heat olive oil in a large pot over medium heat. Add onions and cook until caramelized, about 20 minutes.
2. Add white wine and cook for another 5 minutes.
3. Pour in vegetable broth, bring to a boil, then reduce heat and simmer for 30 minutes.
4. Season with salt and pepper. Serve hot, garnished with fresh herbs.

- 4 ripe tomatoes, chopped
- 1/4 cup fresh basil leaves
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions:
1. In a large bowl, combine onions, tomatoes, and basil leaves.
2. Drizzle with olive oil and balsamic vinegar.
3. Season with salt and pepper. Toss to combine.
4. Serve immediately or chill for 30 minutes for flavors to meld.

- 1 baguette, sliced and toasted

Instructions:
1. Heat olive oil in a large skillet over medium heat. Add onions and cook until caramelized, about 20 minutes.
2. Sprinkle with brown sugar and cook for another 5 minutes.
3. Season with salt and pepper.
4. Top toasted baguette slices with caramelized onions. Garnish with fresh thyme.
